Methi Paratha



Ingredients:

  • Finely Chopped Fresh Methi Leaves: 2 Cups
  • Finely Chopped Coriander Leaves: 1/2 Cup
  • Wheat Flour: 2 Cups
  • Rice Flour: 1/2 Cup
  • Ginger, Garlic & Green Chilli Paste To Taste
  • Yogurt: 1 tbsp
  • Turmeric Powder
  • Ajwain Seeds: 1 tsp
  • Salt to Taste
  • Ghee or Oil

Procedure:

  1. Mix methi leaves, coriander leaves & salt very well. Keep aside for 10 minutes.
  2. Then add all remaining ingredients and make a dough by adding some water. Apply some oil and keep this dough aside for atleast half hour.
  3. Then make small balls of dough and roll these balls like chapatis.
  4. Heat a tava or griddle and cook these parathas from both sides. Apply some oil or ghee while cooking.
  5. Serve these parathas with any pickle, chutney or yougurt.

Persimmon Milkshake and Award


Ingredients:

  • Persimmon: 1
  • Milk: 1 Cup
  • Honey: 1 tsp
  • Almonds / Cashew: 2 Each
Procedure:
  1. Remove the skin of persimmon. Cut persimmon into pieces.
  2. Blend all the ingredients together to get smooth textured milkshake. Your healthy Persimmon Milkshake is ready to drink.
  3. If you want you can add sugar instead of honey.

Tilachi Puri (Sesame Seeds Puri)



Ingredients:
  • Maida (All Purpose Flour): 1 Cup
  • Wheat Flour : 3/4 th Cup
  • Ghee : 2 tbsp
  • Peppercorn (Crushed): 1/2 tsp
  • Finely Chopped Green Chillies: 2
  • Roasted Till (Sesame Seeds): 1/2 Cup
  • Finely Chopped Coriander Leaves: 1 Cup
  • Cloves
  • Red Chilli Powder to Taste
  • Salt To Taste
  • Oil To Fry
Procedure:
  1. Mix all ingredients in a big bowl & knead the dough using water. Dough should be just like regular puri dough. Keep this dough aside for atleast 30 minutes.
  2. Make small balls of dough. Make small puri of each ball by hand or by rolling pin. Sprinkle roasted sesame seeds and water at one side of the puri. Fold this puri into half and then into quarter. To hold these fold insert a clove just like tooth pick.
  3. Heat oil in a kadhai & deep fry these puries till crisp and golden brown on both the sides.
  4. You can eat these puries just like that or serve with any chutney or ketchup or sauce.

Ratalyacha Sheera (Sweet Potato Halwa)


Ingredients:

  • Boiled & Mashed Ratale (Sweet Potato/Yam): 1 Cup
  • Ghee: 1/2 tbsp
  • Sugar: 1/2 Cup (or More)
  • Chopped Nuts & Raisins
  • Cardamom Powder: 1/2 tsp

Procedure:

  1. Heat ghee in a kadhai. Fry nuts till they become golden brown. Then add raisins & fry for few seconds.
  2. Then add mashed sweet potatoes & mix well. Cook till ghee starts seperating corners of kadhai.
  3. Add sugar & cardamom powder. Mix well and cook for 5 more minutes. Your sweet potato halwa is ready to eat.

Note: If you want you can add milk to this halwa. With same steps you can also make Potato Halwa.

Persimmon Spice Cake


Persimmon fruit is new to me. I was not sure of using this fruit in cake but for AFAM event I tried this fruit & I am glad I tried Persimmon. We all loved this cake. I adapted this recipe from Here

Ingredients:

  • All Purpose Flour: 1 & 3/4 Cup
  • Persimmon Pulp: 1 & 1/4 Cup
  • Butter: 1/2 Cup
  • White Sugar: 3/4 Cup
  • Baking Soda: 1 tsp
  • Egg: 1
  • Salt: 1/2 tsp
  • Chopped Almonds, Cashews: 1/2 Cup
  • Raisins: 1/2 Cup
  • Cinnamon Powder: 1tsp
  • Nutmeg and Cloves Powder: 1 tsp
  • Orange and Lemon Zest: 1 tsp

Procedure:
  1. Mix well persimmon pulp and baking soda. It will set after some time.
  2. Beat butter and sugar until fluffy. Add egg and persimmon mixture. Combine flour and spices and add to persimmon mixture.
  3. Blend well, stir in nuts and zest. Spoon into a 9 inch greased cake pan. Bake at 350 for about 40 or more until knife comes out clean.
  4. Before serving, sprinkle with powdered sugar or whipped cream or vanilla ice-cream.

Kurkure Corn Snack



Ingredients:

  • Kurkure: 1 Medium Pack
  • Frozen Corn Kernel: 1/2 Cup
  • Finely Chopped Onion: 1/2 Cup
  • Finely Chopped Capsicum: 1/2 Cup
  • Finely Chopped Tomato: 1/2 Cup
  • Diced Boiled Potato: 1/2 Cup
  • Lemon Juice: 1 tsp
  • Chaat Masala to Taste
  • Red Chilli Powder to Taste
  • Salt to Taste
  • Finely Chopped Coriander for Garnishing

Procedure:

  1. Microwave corn for 3 mins.
  2. Add onions and capsicum. Mix well and again microwave for 2 mins.
  3. Then add all remaining ingredients and mix well. That's it your kurkure corn snack is ready to eat.

Lentil Crepes With Methi Leaves


I adapted this recipe from Anudivya's Lentil Crepes. I made some changes in the ingredients which I loved.

Ingredients:

  • Mung Daal: 1 Cup
  • Channa Daal: 1/4 Cup
  • Green Peas Daal: 1/4 Cup
  • Urad Daal: 1/2 Cup
  • Tur Daal: 1/4 Cup
  • Finely Chopped Methi Leaves: 1 Cup
  • Green Chillies, Ginger and Garlic Paste to Taste
  • Dry Peanut Chutney
  • Curry Leaves: 4-5
  • Finely Chopped Coriander
  • Turmeric Powder
  • Salt to Taste

Procedure:

  1. Wash & soak all daals and curry leaves for atleast 7-8 hrs or overnight.
  2. Grind all daals with some curry leaves, salt, turmeric and green chillies, ginger and garlic paste. Add water as required and make a smooth paste.
  3. Then add chopped methi leaves and coriander leaves and mix well.
  4. Heat one non stick griddle. Pour a small ladle of batter in the center, and spread out in circular motion till you get a thin layer. Sprikle some dry peanut chutney and drizzle some oil.
  5. Cook crepes till it starts become brown then remove from griddle.
  6. Serve these crepes with any chutney or sauce or potato sabji.

About Persimmon:
A persimmon, known to the ancient Greeks as "Food of the Gods". Persimmons are generally light yellow-orange to dark red-orange in color, and depending on the species, vary in size from 1.5-9 cm (0.5-4 in) diameter, and may be spherical, acorn-, or pumpkin-shaped. They are high in glucose, with a balanced protein profile, and possess various medicinal and chemical uses. Persimmons are eaten fresh or dried, raw or cooked. When eaten fresh the peel is usually cut/peeled off and the fruit is often cut into quarters or eaten whole like an apple. It can be used in cookies, cakes, puddings, salads and as a topping for breakfast cereal.
