Healthy Mix Vegetable Soup and another Award.


For Raaga's MBP: Soup and Salad event I am trying Manasi's Mix Vegetable and Coconut Milk Soup. I love this healthy soup. I made little bit changes to original recipe. I did not use beet root and instead of pressure cook all vegetables I chopped them very fine. Here is my version

Ingredients

  • Cauliflower Florets: 1 Cup
  • Cabbage: 1/2 Cup
  • Large Tomato: 1
  • Medium Size Carrot: 1
  • Green Beans: 10 - 15
  • Green Peas: 1/2 Cup
  • Chopped Onion: 1/2 Cup
  • Coconut Milk: 1 Cup
  • Ginger Paste: 1 tsp
  • Red Chilli Powder: 2 tsp
  • Bay Leaves: 1-2
  • Coriander Powder: 2 tsp
  • Cloves: 3-4
  • Olive Oil: 2 tsp
  • Salt and Black Pepper to Taste
  • Water as needed

Procedure

  • First of all finely chopped all vegetables in food processor and keep aside.

  • Heat olive oil in a sauce pan. Then add the garlic paste, cloves, bay leaves and saute the chopped onions until light golden brown.

  • Then add chopped vegetables to the pan. Mix all ingredients very well. Cover and cook them for 4-5 minutes, then add all other spices. Then add chopped tomato. Cover pan with lid and let them simmer for 6-7 minutes. Then add half of the coconut milk and cook for another 5 minutes.

  • Then remove the pan from flame. Let it cool for a while. Then remove cloves, bay leaves by hand. Then blend all mixture in a blender to fine paste. Add remaining coconut milk while blending. Add water to achieve the desired consistency. Then add salt, pepper of needed.

  • Garnish this soup with finely chopped coriander and serve hot.

Carrot Sandwich and Two Awards



Ingredients

  • Bread Slices: 4
  • Finely Grated Medium Sized Carrots: 2
  • Soya Sauce: 1 tsp
  • Red Chillie Powder: 1/2 tsp
  • Turmeric Powder: 1/4 tsp
  • Finely Sliced Onion: 1/2
  • Ginger Garlic Paste: 1/2 tsp
  • Oil: 1 tsp
  • Dry Peanut Chutney or Dry Ridge Gourd Skin Chutney
  • Salt to Taste

Procedure

  • Heat oil in a small kadhai. When oil warms add onion slices.
  • When onion slices become translucent add finely grated carrots and stir fry them for 3-4 minutes.
  • Add soy sauce, red chilli powder, turmeric powder, ginger - garlic paste and salt. Mix well. Stir fry on a medium flame till the mixture becomes little sticky. Switch off the flame.
  • On two bread slices sprinkle some dry chutney, then put some carrot mixture, again sprinkle some dry chutney and then cover with other bread slice.
  • Put this sandwich in the sandwich maker. When they are done serve hot with any sauce.

Ratalyachi Ghari (Sweet Potato Roti) For Roti Mela



Ingredients

  • Sweet Potato(Boiled & Mashed): 1 Cup
  • Shredded Jaggery: 1 Cup
  • Cardamom Powder: 1 tsp
  • Wheat Flour: As required
  • Salt to Taste
  • Oil or Ghee

Procedure
  • Mix boiled, mashed sweet potato, jaggery, salt, cardamom powder very well so that jaggery will almost dissolve in sweet potato.
  • Then add wheat flour slowly. Mix all ingredients very well. Add wheat flour till you get nice dough. Don't add any water. Knead the dough very well by adding little oil or ghee. Cover this dough with wet cotton cloth. Keep aside for atleast half hour.
  • Then make small ping pong ball size balls. Roll them with rolling pin just like regular roti.
  • Heat tava on gas. Apply some ghee or oil on tava. Transfer roti on tava. Cook roti from both sides on medium flame.
  • Serve this hot roti with warm milk or pickle.

Tips

  • Instead of sweet potato you can use rippen bananas, pumkin, potato.
  • Don't use sugar instead of jaggery otherwise roti will become very hard to eat.
  • If you want you can make these roti puri size and dip fry it.
  • These rotis remains good for 7-10 days so these are good for travel.
